Anzac Biscuits

Ingredients:
1 cup rolled oats
1 cup flour
1 cup dessicated coconut
3/4 cup caster sugar
1 1/2 tsp baking soda
2-3 Tbsp golden syrup
1/2 cup canola oil (or similar)
1 egg, lightly beaten

Method:
Preheat the oven to 180C and line two baking trays with paper.
Mix the oats, flour, coconut, sugar, baking soda in a bowl.
Add the golden syrup. Whisk or lightly beat the egg with the oil.
Add the wet mix to the dry mix and combine until mixture binds together.
Roll spoonfuls of the mixture into balls, and then lightly flatten on a tray with fingers or a fork.
Bake for 10-15 mins, until golden.
Store in an airtight container, once cooled.
